Trapiche Cabernet Sauvignon pärineb valitud viinamarjaistandustest Mendoza idapoolsetelt aladelt, kus on liivane pinnas. Viinamarjad korjatakse käsitsi, puhastatakse vartest ja külmmatsereeritakse. Seejärel fermenteeritakse temperatuuril 24°C 15 päeva, mille jooksul toimub lühiajaline kokkupuude tammega. Järgneb õhusurvega press ning kontrollitud malolaktiline fermentatsioon. Lõpuks vein stabiliseeritakse, filtreeritakse ja villitakse.
