Bried is called the queen of cheeses. The soft and creamy white mold cheese selected from the soft whole milk of Pajumäe is surrounded by an edible white mold crust. When ripe, the inside of the cheese turns pale yellow and creamy. The cheese is aromatic and mild in taste, slightly salty, creamy and full-bodied in texture. Pajumäe Brie is ideal for a light meal or after dinner. The cheese is also suitable for baking fruit or berry cakes and pies, making snacks or in salads. Of the wines, it can be served, for example, with a lighter type of red wine such as Pinot Noir or Beaujolais. If possible, the cheese could be brought to room temperature in the fridge for up to an hour before serving, so that the aromas and taste stand out better.
